50x kammerjunkers in 30 minutes. Perfect for "Kold-skål", the traditional nordic summer dish. Refreshing, delicious and served ice-cold.
50x kammerjunkers in 25 minutes. These fast and delicious mini cookies are specifically used for koldskål.
Koldskål is the traditional summer dish and a must in every danish home as soon as the summer heat hits (all temperatures above 20°C/70°F).
We made it glutenfree and healthy.

1. Melt the butter
Melt the butter a little and put it in the mixing bowl.
Melting the butter in the microwave oven takes 30 seconds.

2. Blend sugar and eggs
Blend sugar and eggs in the blender or use a whisk until the mixture is fluffy

3. Add all dry ingredients
Add all dry ingredients

4. Blend/Mix to a dough
Blend/Mix everything together to a fluffy, soft dough

5. Roll the dough
Roll a dough sausage and seperate into 2 equal pieces.
Tip: If you want to and have the time, cool the doughs in the refrigerator for 1 hour before cutting

6. Cut 50 pieces of 10 g
Cut 50 pieces of approx. 10 g per piece from the two dough pieces with a knife

7. Form 50 kammerjunkers
Form 50 kammerjunker-cookies from the dough pieces and place them on the baking rack.
Use foodsafe nitril gloves to form them perfectly if you do not like messy fingers...

8. Place on baking rack
Place the pieces on a piece of baking paper on a baking rack.

9. Bake at 200°C/400° F
Bake at 200°C/400° F for 11 minutes in the oven (hot air) until the Kammerjunkers are slightly golden

10. Let them cool down
Let the kammerjunker cookies cool down properly on a cooling rack
