8x Easy 35 minutes rolls gluten-free, starch-free, psyllium-free with yeast from scratch
You can bake these easy rolls in the morning and taste them only 35 minutes later for breakfast. Easy and fast, simple to make with basic utensils.
Gluten-free with yeast and these rolls do not need to sit and rise twice or for a long time.

1. Put the oatmeal in a pot
Put the oatmeal in a pot with 100 g water and cook a porridge

2. Add the butter to the hot porridge

3. Let the porridge cool down
Let the porridge cool down to approx. 30°C

4. Whisk water and yeast
Whisk water and yeast together in a glass bowl with a hand whisk

5. Whisk in sugar and eggs
Whisk in sugar and eggs together with a hand whisk or a hand mixer for approx. 2-3 min. until it becomes a fluffy mass

6. Put all ingredients in the bowl
Put all ingredients and the egg-sugar mass in the mixing bowl

7. Put the porridge in
Put the porridge in the mixing bowl

8. Mix the dough for 2 min.
Mix/stir the dough together for 2 min. with your hand/dough scraper or a hand mixer, until the dough is smooth and soft.

9. Form 8 buns
Form 8 buns (approx. 80 g) and place them on a baking sheet with baking paper

10. Brush the buns
Brush the buns smoothly with whole milk or water, so that the entire surface is smooth and even

11. Sprinkle
Sprinkle with birch seeds on top or with sesame, nigella or what else you like best. We sprinkle these rolls with white birch seeds.

12. Put the rolls in a plastic bag
Put the baking sheet with the rolls in a plastic bag and close it with a knot or clip

13. Let the dough rise
Let the dough rise for 30 - 60 min. in a warm spot. Might also be in the oven/airfryer briefly heated and then turned off.

14. Preheat the oven
Preheat the oven or airfryer to 200°C/ 400°F hot air

15. Let the dough rise further
Let the dough rise further at room temperature until the oven is ready

16. Bake the rolls
Bake the rolls at 200°C hot air for 20 minutes.

17. Let the rolls cool on a baking rack.
Remove the rolls from the baking sheet and let them cool completely on a baking rack.
