1. Whisk water and yeast
Whisk water and yeast together in a glass bowl with a hand whisk

2. Add psyllium-powder
Put psyllium-powder in the bowl and let it soak for 2 min.

3. Beat sugar and egg
In the meantime, beat sugar and egg together with a whisk or a hand mixer for approx. 2 min. until it becomes a fluffy mass. The egg-sugar mixture helps build the structure of the dough

4. Put all ingredients into mixing bowl
Put all ingredients and the egg-sugar mixture in the mixing bowl

5. Add psyllium jelly
Put the psyllium jelly in the mixing bowl

6. Mix/stir the dough
Mix/stir the dough together with a spatula and your hands (wearing nitrile gloves) until the dough is smooth and soft.

7. Form 6 rolls
Form 6 rolls (approx. 80 g/each) and place them on a baking tray lined with baking sheet

8. Brush the rolls
Brush the rolls with milk or water

9. Sprinkle with sesame & birch
Sprinkle with white birch seeds and/or sesame seeds on top, if desired

10. Let the buns rise
Let the buns rise for 15 (- 20 min.) at room temperature

11. Preheat the oven
Preheat the oven or Airfryer to 210°C or 410°F at hot air

12. Bake the buns at 210°C
Bake the buns at 210°C hot air for 13 minutes.

13. Let them cool down
Remove the buns from the baking sheet and let them cool down on a cooling rack.
