Modified starches

What it does

Thickens and binds; coats snacks.

What it is made from

Made by chemically or physically changing a starch from corn, potato, wheat or tapioca.

Allergies and diets

  • Gluten? Can be made from wheat or another gluten cereal (the source is not always named).
  • Nightshade? Can be made from potato, tomato or capsicum (nightshades).
  • Corn (maize)? Can be made from corn (maize).

In the EU, wheat starch must be named on the label. If a modified starch has no named source it is usually corn, potato or tapioca. Check the label, or ask the maker if you avoid gluten, corn or nightshades.
