Follow the complete chocolate-making process—from roasting and grinding raw cocoa nibs to tempering and forming each chocolate dream by hand.
No additives, no shortcuts, no gluten and no soja just pure organic chocolate perfection.
Pasteurise the egg yolk in a glass bowl in a sauce-/chocolate-pan for 2-4 min. at low temperature. The egg yolk pasteurizes at temperatures above 60° C /140° F
Now add the powdered sugar to the egg yolk and beat for 2-3 min
Add the cacao-butter and melt it in the glas bowl
Add the cream and let everything soak
Remove the pot from the heat and let the mixture cool down to 40°C/105°F
Roast the cacao nibs in the airfryer at 175°C / 350°F for 13-15 min.
Chop the cocoa nibs in a coffee grinder or blender until they get powdered and creamy
Blend everything together
...and pour the blend into the chocolate molds with the help of your spatula
Let the 24 chocolate dreams cool down in the mold form for 60 min. in the refrigerator. Then remove from the mold with a thin spatula or tea-spoon
