Made by heating sugars (glucose syrup from corn or wheat, sucrose). The sugar source is often not stated.

Allergies and diets

• Gluten? Can be made from wheat or another gluten cereal (the source is not always named).
• Corn (maize)? Can be made from corn (maize).

In the EU highly refined wheat glucose syrup is exempt from allergen labelling because processing removes almost all gluten. It is normally below 20 ppm, but ask if you are very sensitive.
